Monday's are the new IT day! Like I blogged earlier this week, The Bachelor is back and I am beyond thrilled for the drama roller-coaster of a season I'm sure it will end up being!
Speaking of Bachelor Monday's, lots more wine will be consumed in my household...by me.. and I am running out of canister space to hold my wine corks. Look at this new craft I found! I'm thinking this is great and may be a must-try!
I realized I forgot to post an awesome recipe from the Holidays ya'll! I made a quick and easy spicy craberry cream cheese crostini appetizer and they were absolutely delicious!
Ingredients
•
1 (12oz) bag fresh cranberries, finely chopped
1 C sugar
2 green onions, thinly sliced
2 jalapenos, seeded and diced
3 Tbsp fresh cilantro, finely sliced
1 (8oz) package neufatchel cream cheese
1 baguette, sliced ½ inch thick on a diagonal
olive oil
additional cilantro leaf and quartered cranberry for garnish
Preheat oven 400 degrees..
Place baguette slices on baking sheet, drizzle with olive oil
Bake 5 minutes until golden brown, let cool
In mixing bowl combine cranberries, sugar, green onions, and jalapenos
Let marinate for 5-10 minutes.
Drain juice, add cilantro, mix well.
When ready to serve spread 1 Tbsp cream cheese on each baguette, a dollop of cranberry
mixture, garnish with additional cilantro leaf and cranberry if desired. Enjoy!
So hubby & I are trying to start eating a little better along with consistent exercise (he is SO much better than I am at the eating part) and we've decided that strict diets just don't work for us (haha) We've been sort of curious and reading more about the Mediterranean Diet everyone has been talking about and it seems really doable. Have any of ya'll tried this?

This season is going to be such a hot mess, I can just feel it! Amen to the wine, girlfriend! I always end up with ice cream by the end of the episode as well :/

I know we are Instagram friends, but I thought I'd hunt down your blog too... so, you have a new follower! :) I think I am actually going to watch the Bachelor this time, I need to catch up with the last episode tho. Too many people are talking about it and I don't want to feel left out. ;) I have a LOT of wine corks laying around my house, too. I've done a burlap/wine cork letter A for our last name as a craft, but I need to find another craft as I have too many (I drink too much I guess! ha!).
