One Pot Fall Recipe

Ya'll, I have got to share this simple, sort of interesting combo and yummy recipe we made this week. There has been a lot of versions of this floating around and I have to admit I haven't used brussels in ANY of my recipes to date so I was super excited to have them. The taste of this recipe just screams Fall and despite the smell of reheating brussels (you know, like cabbage ha!) it keeps well for a couple days. Also, it meets Paleo standards! We were pleasantly surprised with this dish. Hubby accidentally added a little more cinnamon and interestingly enough, it made it even better! Try it and let me know what ya'll think!

Chicken, Apple, Sweet Potato, and Brussels Sprouts Skillet

With sweet potatoes, apples, Brussels sprouts and bacon, this healthy Paleo chicken skillet is packed with flavor and delivers every food group in one pan!

Yield:
Serves 4
Prep Time: 25 minutes
Cook Time: 25 minutes
Total Time: 50 minutes

Ingredients:

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into 1/2-inch cubes
  • 1 teaspoon kosher salt, divided
  • 1/2 teaspoon black pepper
  • 4 slices thick-cut bacon, chopped
  • 3 cups Brussels sprouts, trimmed and quartered (about 3/4 pound)
  • 1 medium sweet potato, peeled and cut into 1/2 inch cubes (about 8 ounces)
  • 1 medium onion, chopped
  • 2 Granny Smith apples, peeled, cored and cut into 3/4 inch cubes
  • 4 cloves garlic, minced (about 2 teaspoons)
  • 2 teaspoons chopped fresh thyme or 1/2 teaspoon dried thyme
  • 1 teaspoon ground cinnamon
  • 1 cup reduced-sodium chicken broth, divided

Directions:


  1. Heat the olive oil in a large, nonstick or cast iron skillet over medium high, until hot and shimmering. Add the chicken, 1/2 teaspoon kosher salt, and black pepper. Cook until lightly browned and cooked through, about 5 minutes. Transfer to plate lined with paper towels.
  2. Reduce skillet heat to medium low. Add the chopped bacon and cook until crisp and brown and the fat has rendered, about 8 minutes. With a slotted spoon, transfer the bacon to a paper towel-lined plate (I simply laid another paper towel on top of the plate with the chicken, then stacked the bacon on that). Discard all but 1 1/2 tablespoons bacon fat from the pan.
  3. Increase skillet heat back to medium high. Add Brussels sprouts, sweet potato, onion, and remaining 1/2 teaspoon salt. Cook, stirring occasionally, until crisp-tender and the onions are beginning to look translucent, about 10 minutes.
  4. Stir in the apples, garlic, thyme, and cinnamon. Cook 30 seconds, then pour in 1/2 cup of the broth. Bring to a boil and cook until evaporated, about 2 minutes. Add the reserved chicken and remaining 1/2 cup broth. Cook until heated through, about 2 minutes. Stir in reserved bacon and serve warm.

Ya'll, this month has really been so much fun and now we have Halloween (and a reason to pair candy with our wine) right around the corner! Welcome to another What's Hap-'Pinning' Wednesday - link up with us below and share anything! We've had so many festivals, good fall food, great weather (now that its cooler) and good news from friends (one blogging friend to be exact!) I'm extremely happy and simply love this time of year! 

On the other hand, Andi has definitely grown a little more strong-willed in the last week...its like a light switch went off and she just wants to be independent. Its heartbreaking at times but I want to thank all of ya'll for your excellent discipline and coping advice. A lot of the suggestions have been working like a charm! She's still my adventurous love muffin that would live outside if we let her. I love her so much more each day and its just hard to grasp that she's growing up and learning more about herself and the world around her (cue the baby fever..the newborn stage just isn't long enough) We took her to another local festival and ya'll, she had a blast! I have to share some pics from our day and give ya'll a daily overdose of Miss A. I also took her to my high school's homecoming, a tradition of mine, and my Dad decked her out in so much gear that she HAS to go there now! (haha) We had so much fun! I hope ya'll have a great rest of the week!

WHW: Supper Club

Hey ya'll and welcome to another What's Hap-'pinning' link up! I'm not sure if I've brought it up before but I've been wanting to start a local supper club for quite some time. (for basically a year now actually!) I had a little bit of free time today and started scrolling through Pinterest for a few ideas on an easy but successful start up. I live in a super small town but there are a bunch of people that I know that would be interested. I've talked to one of my best friends a lot about it because she is in one but she is located in Atlanta. She has nothing but positive things to say about it. I mean, good food, good friends and good wine? Sign me up! Basically, I want to hear from ya'll and that is what this post is about today! Here are some of the questions I need your advice on:

  • Do any of you have experience with this? 
  • What day should I do it and how frequent? 
  • Should I send out a mass e-mail with the concept, guidelines, etc to those I think might be interested?
  • What is a good menu or recipe that will appeal to the masses?
  • Should it be a certain style or theme?
  • What is a good number of guests?
  • Couples or just the ladies? 
     
Any advice is greatly appreciated = I'm super excited and can't wait to get the ball rolling on this! I'm even thinking I can maybe make it a "Friendsgiving" to kick it off before the rotation starts. Weekending

Hey ya'll and happy Monday! We're kicking off a random warm week here in VA and I'm not happy about it. Mid 80's in October? No thanks! However, next week a cold front is coming through and I'm sure the warm days will be behind us until next year. This weekend was packed with fun for us and I'm actually happy to just be relaxing at home today with my coffee and littles. Saturday, I slept in while the hubs got Miss A up and got her breakfast made. He also surprised me with a little breakfast creation for myself that was lovely and delicious! If you follow me on snapchat, you saw me bragging about this! (rare moments haha) Afterwards, we headed out to the annual Autumn Days festival. I love a good small town festival and we always make it a point to check out this one. There's always tons of cute and crafty vendors, good food and the petting zoo and lawnmower races are always a hit! Yes ya'll, lawnmower races.

Sunday morning we got up, had breakfast and out on our Sunday best to meet the in-laws for church. Afterwards we had some fried chicken at my mother-in-laws and relaxed a little before Miss A and I headed to run some errands and play at Target. Yup, we were pretty basic yesterday! I scored that banana/palm leaf pink and green throw I'd been eying since the summer! It was finally marked down to $19 ya'll so I definitely snagged it this time. I also got Andi a super plush pink throw for her crib for the upcoming winter months. She has crib blankets, but this is a twin XL so it basically covers the whole crib. She loves it and cuddled it throughout our entire trip. Overall it was a great weekend and of course we're already counting down until the next! Linking up today with Biana & Meghan!

WHW: Food

Hey ya'll and happy what's hap-pinning Wednesday! Link up below and join Jenn and I for another edition! Today I'm focusing on food. I've said it before, but for some reason I always get motivated this time of year to make new recipes for the family. Comfort food is key with these cooler temps and any excuse to bust out one of my crock pots is a good excuse! (Yes I have multiple)

So far we've made some super easy but yummy ones however I've not been on my picture game! I'll have to share with ya'll a similar recipe via Pinterest if I don't have a picture - maybe we'll stop gobbling them up so I can stage a few photos (at least that means it was good right?) Anyway, lately we have tried white bean chicken chili soup, meatloaf cups with mashed potato icing, salmon with quinoa and bacon cooked green beans, halloween cupcakes and stuffed peppers carved like little pumpkins! Since I'm on this kick, share with me some of your go-to weeknight recipes whether it be in the comments or via e-mail! I'd love to add some new ones to the list for upcoming weeks. Ya'll these were so fun! We used ground beef, rice, black beans and tomato sauce with cheese
for the filling! Bake on 350 for about 30 minutes and enjoy!






Ps - Miss A is 18 months today! Ya'll, where the heck did my tiny baby go? Happy 1 and a half bday little girl! We love you! (time to start planning her 2nd birthday right? haha!)

Hey ya'll and happy weekend! This one came quickly huh? I'll take it! Dreary weather is still on tap and I'm still sending prayers to everyone being affected by Matthew so hang in there ya'll! Today I'm sharing five of my favorite things this week including a super easy Fall craft! I'm linking up today with April from A. 1. Super simple Fall craft for ya'll - take the $1.00 candy pumpkin bins, spray paint them any color (we used metallic gold spray paint from Lowes) and stick a medium sized mum in them! Quick, simple and cheap!

Hey y'all and happy mid-week link up day! What's going on in your neck of the woods? Grab our button and let us know below. Did y'all happen to watch the VP debate last night? Well if you did, that was my cute little hometown that I'm so proud of! The town and the college has done such a great job of making everything look gorgeous and drumming up pride and business across the entire county! Before settling in to watch the debate however, we took Andi to the pumpkin patch and boy did she have a blast! She played in the hay and corn, pet barn animals and kittens, picked out multiple pumpkins and even rode a miniature tractor! The pumpkin patch is a must each and every year for us and I can't wait to show y'all the gorgeous pumpkins we came away with. Check back here on Friday and I'll share some photos of our Fall porch! (It was too dark once we got home)
