Weekending - the full week

I'm back! Whew- I'm so out of the loop I'm sure but being away with a change of scenery is always nice. We celebrated my friend Tiff and her baby boy (due next month) and then headed down to the bay house. I have to admit though, the weather sucked! It was cloudy, windy and semi-chilly the ENTIRE week. No beach time for these gals because we would have blown away for sure. Emma didn't let the waves and rough waters stop her - that girl was chasing sticks and riding waves for days! (a few times I thought I might have to jump in and save her..) We spent the days with Starbucks in hand, antique shopping, boutique shopping, old home and church touring and eating tons of seafood fresh produce from the area. Of course the day we left it was humid and sunny which almost tempted me to stay longer...ugh it always seems to work like that on vacation huh?

Anyway, we are back and we sure did miss Dad/Hubs and I know he missed little Miss A - he wasn't able to join us at all so we were apart for the whole week. I do have to brag a little. I came home to a clean home with fresh clean sheets/duvet and even staged pillows, cleaned out fridge and kitchen, no laundry and my favorite candles lit! I was so happy to just come home and relax instead of worrying with those thing. Go Hubs!!!!

Fall! That's what's hap-pinning over here! Even though I'm still at the bay house trying to soak up some last minute rays waterside, Fall is on the brain! Summer makes me want to cook and try new recipes because of the fresh produce available and all of the healthy colorful choices BUT Fall means warm and cozy with crockpot meals and soups. I'd say I dig both! I must admit, I've already added 4 sparkly pumpkins to places around the interior of our home.... and some orange and brown hydrangeas to our door wreath. Happy Friday ya'll! Who's excited for the weekend? This week seemed like a blur! This weekend will be just as busy too. Mama, Andi and I are driving to Hickory, NC tonorrow for Tiffany's baby shower. It's a long drive but I am so excited to shower little baby Apollo! (shopping for baby boy stuff was an interesting change too- Apollo & Andi = future BFF's I'm sure!) Then on Sunday I'll be judging the Longwood University cheerleaders for the 2nd year in a row and then right after that we are headed to the bay house for a WEEK! I just pray the weather is nice for our last little baycation!

1. If you follow me on social media - I'm sure you've already seen that miss A had great x-rays and she no longer needs a sling. She's free! We also celebrated her turning 5 months! Thank you all so much for all of your comments, e-mails, texts and prayers!



2. So I must admit, I am so excited for Halloween this year and want to dress up miss Anderson in like 10 different costumes....but....I picked one and this little pink bunny made the top of the list. I was a bunny at her age so I will definitely have to do a side by side comparison to show ya'll!

 

3. Ok excuse the language on this one, but this is definitely my favorite funny this week - this is so scarily accurate to my life! (haha!)

What's Hap-"Pinning"

Hey ya'll! Sorry for the random no blogging for the last week stint! We've had a lot going on with family birthdays, Miss America parties and getting Miss A ready for her follow up x-rays and appointment THIS morning with her orthopedic doc. Send some prayers our way if you've got a minute today! We're hoping everything is healed and that she will be just fine with her new access to that poor left arm that has been braced for 3 weeks.


Anyway, so Andi has now witnessed her first Miss America pageant and I am actually so happy with the newly crowned Miss Georgia. I had SC on my bracket for taking the crown but had GA in my top 5 so I was pleased! I also printed out the paperwork for the Tiny Miss pageants in our area that prep for things like Miss America ..... just to read and go over! I promise I won't put her in pageants until she can at least walk ok?? But when I saw Miss GA at the end of the stage lean over to hug and kiss her parents I lost it - and it was not wine induced! I just love the Miss Virginia and Miss American organizations that much! On the birthday front - we celebrated my niece Chloe turning 14, my father-in-law and my bestie Radford who is due in February! September is quite the b-day month. Oh and Remember my friend Heather's twin girls that we born at 26 weeks?? Well they are celebrating their FIRST birthday today and I CANNOT believe how fast time goes by! Happy birthday Madelyn and Baylor! Auntie loves ya'll! We also celebrated friends of ours as we watched them tie the knot Saturday night. Despite the yucky weather, the soiree was elaborate and huge and we had a blast! (one too many white wines later....)


Also, I just want to point out that I woke up this morning to a crisp 62 degree house and actually threw on my first sweatshirt and yoga pants while making coffee! Little A has her first bodysuit under her jammies and we are absolutely loving it! So, with this random post, here are some picture from last week! Happy hump day ya'll! Hope everyone had a fabulous long weekend and is getting back into the swing of things for a short week! Jenn and I are coming together again for another Wednesday What's Hap-pinning link up and we hope you join in as well - jut grab the button below and post about whatever is going on in your neck of the woods currently. That could be your favorite pins, new recipe you tried, a DIY...the ideas and inspiration = endless!


I've been on a pinning kick of fun and easy new recipes to try. I came across this chicken enchilada casserole and just had to try it. I mean, I'm obsessed with Mexican on any given day but to throw it into something with the label of casserole? I was hooked! This was super easy and fun to make and turned out surprisingly colorful and pretty to serve! Below is the recipe step-by-step and then some quick snap-shots before we devoured the entire thing.

Ingredients:

  • 3 cups red enchilada sauce
  • 16 corn tortillas, halved
  • 2 (15 ounce) cans black beans, rinsed and drained
  • 1 (15 ounce) can whole kernel corn, drained
  • 6 scallions (green onions), thinly sliced
  • 4 cups (about 1.5 pounds) shredded cooked chicken
  • 3 cups shredded Monterrey Jack or Mexican blend cheese
  • 1 avocado, peeled, pitted and diced
  • 1/2 cup loosely-packed chopped fresh cilantro

Directions:

Heat oven to 375 degrees F. Prepare a 9x13-inch baking dish with cooking spray.
Pour about 3/4 cup enchilada sauce in the baking dish, and spread until the bottom of the dish is coated. Top with a layer of about 8 tortilla halves so that the entire dish is covered. Sprinkle evenly with about 1 cup black beans, 1/2 cup corn and a fourth of the green onions. Then sprinkle with a heaping cup of the chicken, and about 3/4 cup shredded cheese. Repeat with a second layer of tortillas, then sauce, then beans, corn, green onions, chicken, and cheese. Then a final layer of tortillas, sauce, beans, corn, green onions, chicken and cheese. Then conclude with a final layer of tortillas and sauce (reserving about 3/4 cup of cheese to add partway through baking). Cover the pan with aluminum foil, then bake for 20 minutes.
Remove pan and remove aluminum foil. Sprinkle the top of the enchiladas evenly with the remaining 3/4 cup of cheese, then return to the oven (uncovered) and bake for 10 minutes or until the cheese is melted. Remove pan, and sprinkle with avocado, cilantro, and remaining green onions. Serve warm.

2 Years & Counting

Hey ya'll! Taking a short break today to celebrate our two year anniversary today! Two years of marriage and SO many memories made already - it's crazy how fast it all goes but what a whirlwind of crazy happiness! With a new home and new baby girl it really doesn't get much better. Hope everyone is enjoying Labor Day and had a great weekend!

Happy Friday loves! Can ya'll even believe it is Labor Day weekend? Ummm hello September! Baby girl will be 6 months in October - what the you know what?! Anyway, my friend Tiffany and her hubby are coming in this evening from NC for a double date/sleepover so I'll be watching terrible Netflix horror flicks (our tradition) and eating tons of sugary carbs! (She's due in October with their baby boy Apollo so besides her upcoming shower, this is one of the last times I'll see her before baby!) I hope ya'll have a fabulous weekend and I can't wait to hear all about it Monday!

1. Yea, that's a hummingbird couple just basically eating out of my hand! Love those little guys!

2. Anyone else crazy obsessed with DCC making the team? It's definitely my guilty pleasure even though I'm a die hard Skins fan! This season has me so excited already!

4. I have to admit that I am also loving all of the winter clothes I've been washing and putting away for Miss A - bring on cooler temps paaa-lease!

5. We tried a new baked oyster recipe last week that was super simple: dip the oyster in a mixture of flour, salt, pepper, garlic and basically anything else you want, then dip it in an egg and then coat with Asian panko bread crumbs and bake on greased baking sheet until golden brown! Yum! (texas pete dipping sauce for the win!)
